There are some dishes that don’t last long on the table… and these Mississippi Mud Potatoes are one of them. Loaded with cheese, bacon, and tender potatoes, this is the kind of recipe people go back for before they even finish their first plate.

Why You Will Love Mississippi Mud Potatoes
Honestly, the name is a little odd, but the taste is amazing. If you love a loaded baked potato, you will love this casserole-style recipe. Loaded with butter, cheese, and bacon, this side dish will quickly become a family favorite! This dish will go with just about anything, and it’s super easy to make and reheats really well, too. We made this as a side to our delicious Brown Sugar Meatloaf, and it was a big hit.
What Potatoes Do You Use?
Yukon Gold potatoes are best for this dish; they cook well and have great flavor. You could use other potatoes if you like, red, russet, or Idaho. We also peel the potatoes for this dish, but you really don’t have to if you prefer the skin.
Do these Mississippi Mud Potatoes Reheat Well?
Yes, they do reheat well and will keep for a few days in an air-tight container. We just reheated them in the microwave and found them to be delicious!
